Is it just me, or have you also missed enjoying some local delish strawberries?!

Strawberries are easily one of my favourite fruits, and truthfully…they always have been!

Especially when I was younger.

This was likely due to their nostalgic nature, (as soon as school was out, my mom would take me out to local farms and we’d go strawberry picking four hours underneath the hot summer sun!)

Speaking of strawberries, this week we’ve got a super yummy, healthy treat to serve up.

These Strawberry Shortcake Energy Balls are a healthy, on-the-go option that you can easily pop into your month when you’ve craving something light, and fruity… like strawberry shortcake!

Not only are they vegan, gluten and sugar-free, they are also an easy to whip up, no-bake snack that requires very little ingredients.

And did I mention that they’re PINK?

Talk about having your cake and eating it too!

My forever guy and I enjoy them on road trips, and they make a great dessert for park picnics, or summer BBQs.  

Forewarning: You might want to go ahead double the recipe, because they really don’t last long in our house!

Strawberry Shortcake Energy Balls

Ingredients:
Instructions:
  1. Slice up your strawberries, and the medjool dates.
  2. Add all the ingredients in a food processor, and process on a medium speed until smooth. (Avoid putting the speed on high, as the dates will clump together in a big ball).
  3. Once smooth, compact and roll the mixture into approximately 15-20 balls.
  4. Place the energy balls in the fridge to chill for at least one hour before serving.
  5. Top with shredded coconut or freshly sliced strawberries.
  6. Pop ‘em into your mouth and enjoy!
