Since we ran our 10-Day Sugar-Free Real-Food Reset for the second time this past March of 2015, we’ve been fielding requests to run it again. Which is amazing – because we love helping you learn about healthier eating and working with you to reach your goals!

But, for those of you who weren’t able to join us for the Real-Food Reset, we’re sharing a couple recipes from the included 5-Day Menu Plan.

 

You can enjoy these tasty grain-free pancakes for breakfast this holiday season, without the crazy sugar high (and crash!) that normally follows – just go easy on the maple syrup. These pancakes are easy enough for a weekday morning too!

The Recipe

Grain-free Pancakes

Ingredients:

1 egg
1 TBsp coconut flour
1/4c nut milk of your choice (like homemade almond milk) or water
1/8 tsp each: baking soda, Ceylon cinnamon and pure vanilla extract
pinch of sea salt
coconut oil, for frying

Instructions:
  1. In a small bowl combine ingredients.
  2. Heat frying pan to medium. Once hot, melt coconut oil.
  3. Drop batter into pan, spreading with the back of your spoon if necessary, to make 2 – 3 pancakes.
  4. Cook for about 2-3 minutes, and flip over when bubbles appear.
  5. Cook for another couple minutes until cooked thoroughly.
