These tasty, not-too-sweet, paleo Coconut Raisin Cookies are perfect as a dessert or as a snack.

If you love Oatmeal Raisin Cookies, these are an excellent grain-free alternative.

Coconut Raisin Cookies

Ingredients:

1 cup almond flour
1 cup shredded coconut
2 tbsp coconut manna (coconut butter)
1/4 cup coconut oil
1/4 cup coconut sugar
1 tbsp flax seed
1 tsp vanilla extract
pinch sea salt
1 tbsp cinnamon
1/2 tsp baking soda
1 large whole egg
1-3 tbsp of water as needed
1/2 cup raisins

Instructions:

Directions:

  1. Preheat oven to 350*F.
  2. In a large bowl or stand mixer, mix together all ingredients except almond flour, shredded coconut and raisins.
  3. Once well combined, add in almond flour in portions.  Next add in shredded coconut.  Lastly fold in raisins.
  4. Drop tablespoonfuls of dough onto a parchment lined baking tray.
  5. Bake for approximately 12 minutes, until they are slightly stiff to the touch or a toothpick inserted comes out clean.
