What’s simpler than a lunch time salad for summer? A salad you can prepare ahead, and carry along with you in a jar!
I’m a fan of salads in a jar because they’re easy to prep, which saves me time, you can layer the ingredients in a way that keeps the ingredients fresh and crisp, and there’s no cook time required when it’s time to eat!
A Cobb salad is a classic summertime meal, loved by many!
This recipe was originally created to follow the Beachbody diet plan (more on that below!). It’s easy to put together, and can be tweaked depending on your dietary requirements!
For example:
Can’t Have Cow’s Milk? — substitute for a goat or sheep cheese, or even a plant based “cheese”.
Don’t Have Spinach On Hand? — use greens of your choice!
Avoiding Tomatoes? — substitute for crunchy cucumbers or carrots.
